Mushrooms with Sherry

The Spanish love mushrooms.  We created this after trying a similar dish at a Tapas bar in Adelaide.  It is a great tapas dish or a wonderful accompaniment to any meal.   You may also like to try it with mixed mushrooms – any mixture will be great.

Ingredients

  • 12 medium swiss brown mushrooms
  • 2 tablespoons of butter
  • 1 clove of garlic
  • 10 – 15 fresh sage leaves
  • 2 – 4 tablespoons of sweet sherry (but really any sweet dessert wine will also work)

Method

Melt butter in a pan with the garlic and half the sage leaves – in a medium

Add mushrooms and sauté until tender – should only take a few of minutes.

Add sherry, stir through until almost completely reduced.

Serve with fresh sage leaves.
