Using only premium grapes from growers who are passionate about their vineyards Dylan’s role is simply to let the juice do its thing.
Wild yeast (where the weather allows)
no added acid,
no added sugar
Minimal amounts of Sulphur are added if needed including a small amount just before bottling to ensure proper preservation.
The wine spends 20 weeks on skins in an “Egg” fermenter then aged in second use French oak for a further 10 months. Once again you will be rewarded if you let this one breath.
Straight Petite Verdot is a personal favourite is generally hard to find and this is the first time I have had this style outside of Bordeaux.
Petite Verdot is big and juicy and usually blended with Cab Sav. Petite Verdot has a deep red colour and perfumed aromas and these traits bring a lot to a blend. By itself it is great a big bold wine with deep colour and perfumed aromas. Think cherry, good acidity and smooth tannin.
